MAMMA'S MOUTHWATERING CHICKEN AND RICE

1 package of Mamma's Mouthwatering Rice Mix 
4 chicken breasts cut into strips 
3 Tablespoons olive oil

In large pot or skillet, heat 2 tablespoons of oil. Add chicken and brown lightly on both sides. Add Mamma's Mouthwatering Rice Mix and 3 ½ water to chicken along with remaining olive oil. Cover. Bring to a boil, reduce heat to simmer and cook until rice is cooked and all liquid is absorbed. Serve with salad for a complete meal.


 

MAGNIFICENT MONA LISA SPICE DIP

1 package Magnificent Mona Lisa Spice Mix 
1 24-oz sour cream*

Mix together until blended. Serve with chips, vegetables or top a baked potato!

*Substitute lowfat sourcream


MONA LISA POTATO BAKE

6-8 potatoes, cut up 
1 package Magnificent Mona Lisa Spice Mix 
1/3 cup olive oil

Preheat oven to 350*. Peel and cut up potatoes. Toss with olive oil and Mona Lisa Spice Mix. Bake uncovered in oven for 30-40 minutes until potatoes are cooked. Serve.

*Can top with shredded cheese after potatoes are cooked and bake for additional 5 minutes or until cheese melts. 


THE MONA LISA SANDWICH

6 boneless, skinless chicken breasts 
1 Magnificent Mona Lisa Spice Mix 
1 tomato, sliced 
lettuce leaves 
6 crusty bread rolls

Prepare chicken according to package directions. Let cool. Assemble the sandwich. Enjoy! 


TUSCAN PITA CHIPS

5 Pita Breads with Pocket 
3 Tablespoons olive oil 
2 Tablespoons Tuscan Spice Mix 
½ cup feta cheese, crumbled

Preheat oven to 350*. Split each pita bread in half. Brush with olive oil, cut into wedges about 8 pieces per round. Spread out onto 2 baking sheets; sprinkle with Tuscan Spice Mix and feta cheese and bake for 10-15 minutes until lightly browned. Serve. 


TUSCAN WHITE PIZZA

1 prepared pizza crust 
2 tablespoons olive oil 
2 Tablespoons Tuscan Spice Mix 
1 large tomato, sliced thin 
1 medium onion, sliced thin
1 Cup cheese, shredded (your choice)

Preheat oven to 400*. Brush pizza crust with 1 tablespoon of olive oil. Place tomatoes on crust, top with onion rings and cheese. Drizzle the other tablespoon of olive oil on top of cheese and sprinkle the remaining Tuscan Spice Mix over cheese. Bake for 15-20 minutes until cheese is melted and crust is cooked. Cut into wedges and enjoy! 


BAYOU BACON BREADSTICKS

1 box of grissini breadsticks 
1 pound thin sliced bacon 
2 Tablespoons Bayou Spice Mix 
1/3 cup of brown sugar

Preheat oven to 375*. Mix Bayou Spice Mix with the brown sugar and spread into a large dish. Take one slice of bacon and press into spice-sugar mix. Wrap around one grissini breadstick; place onto wire rack that is sitting over a foil-covered pan. Repeat. Bake for 20-30 minutes until bacon is cooked. Let cool on rack for 5 minutes. Enjoy! 


ATHENIAN GREEN BEANS

1 pound fresh green beans
1 Athenian Spice Mix

Clean green beans, cutting off ends. Bring 2 cups of water to boil. Cook green beans until cooked through. Prepare Athenian Spice Mix according to directions on bag. Drain Green beans, return to pot and add ½ cup of spice mixture to beans, toss to coat. Serve.


ATHENIAN VEAL SCALLOPINI

1-1/2 - 2 lbs. veal (scallopini sliced) 
1 Athenian Spice Mix 
Linguini 
Butter & Olive Oil to taste 
Parmesan Cheese 
Diced Tomatoes (fresh or canned) 
Sliced Mushrooms (cooked) - OPTIONAL 
Capers - OPTIONAL

Prepare ATHENIAN SPICE MIX and marinate veal for several hours or overnight in just enough liquid to cover. Prick with fork to allow marinade to penetrate meat. Reserve remainder for cooking.

Drain meat and arrange in layers in baking dish, cover with remaining mixture, cover with foil and bake in 350 degree oven for 45 minutes. Remove from oven, remove foil, top with sprinkled parmesan cheese and diced tomatoes and mushrooms. Place back in oven uncovered for an additional 15 minutes.

Prepare linguini while veal is finishing according to package directions. Drain and toss with a little butter and olive oil to taste (not a lot as you will be adding liquid from veal).

Remove veal from oven ... it should be tender enough to cut with a butter knife. Remove veal, tomatoes & mushrooms from baking dish and pour remaining liquid over linquini. Toss thoroughly and then put linguini into baking dish and top with the veal and tomato mixture. Sprinkle lightly with parmesan cheese and capers. Serve while hot.
